This kiwi and chia seed pudding is healthy, delicious and super easy to make! Kiwi and chia seeds form a super nutritious combo, loaded with fiber, omega-3 fats, antioxidants and vitamin C. You can meal-prep the chia pudding ahead and enjoy for breakfast or a light snack during the week.

Ingredients list for the kiwi chia pudding recipe

  • 1/4 cup chia seeds
  • 3 kiwis, peeled and diced
  • 1 cup unsweetened almond or coconut milk
  • 1 tablespoon sweetener of your choice (we used maple syrup)
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt (optional)

Kiwi and Chia Seed Pudding

This chia pudding recipe is very easy: All you have to do is whisk together a 4-ingredient basic chia pudding, let it rest for one hour or overnight and then layer with Greek yogurt and diced kiwi.

Directions

1. Combine chia seeds, milk, maple syrup, and vanilla extract in a glass container or mason jar and chill for at least one hour (or overnight – better) in your refrigerator.

2. Remove the chia pudding from the refrigerator and give it a good stir. The chia seeds should have absorbed the liquid and have a thick consistency.

3. In two glass containers, divide the chia pudding into one layer, then add a layer of Greek yogurt. Top each chia pudding parfait with diced kiwi. Enjoy!

Tips for the kiwi chia pudding recipe

  • We added Greek yogurt for protein, but feel free to skip if you want a vegan/dairy-free breakfast.
  • Coconut milk makes a very rich chia pudding, while almond or oat milk is lower in calories. Soy milk has more protein.

How to keep chia seed pudding leftovers

Chia pudding will keep for up to 3-4 days in the refrigerator.
