1. To make the creamy mussel soup: In a large pot or Dutch oven, cook mussels with onion, chopped parsley, and white wine. Mussels are done when they’re all open – about 5 – 8 minutes.

2. Remove the mussels from the pot and remove the shells. Discard the cooking liquids and aromatics from the pot.

3. Return the shelled mussels to the pot with the seafood stock and cook to a simmer for 10 to 15 minutes.

4. Transfer the soup to a large blender and pulse until completely smooth. You might want to work in batches if needed.

5. Filter the mussel soup with a fine mesh sieve and keep it in another pot.

6. Rinse and dry the large pot from the beginning. Melt butter until you get a nutty fragrance, then add the flour to make a roux, stirring with a wooden spoon.

7. Add the filtered mussel soup to the roux in the pot and mix constantly until you get a smooth texture. Add the cream and saffron and stir until creamy. Adjust seasoning with a pinch of salt if necessary.
