  • 5 large tomatoes (tomatoes on the vine are best), quartered
  • English cucumber, peeled and sliced
  • 1/2 large red onion, sliced
  • 2 tablespoons chopped fresh parsley

  • 1 pinch kosher salt + 1 pinch black pepper

For the vinaigrette  dressing:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon kosher salt + 1 pinch freshly ground black pepper
  • garlic cloves, minced
  • 1/2 teaspoon honey or brown sugar (optional for low-carb, Keto, or sugar-free diets)
  • 1 teaspoon dried oregano

How to make the tomato cucumber salad

You’ll find all the ingredients at your favorite grocery store, or, better yet, in season at your local farmer’s market.

This salad recipe is super easy:

  • Combine all the vegetables, herbs, salt, and pepper in a salad bowl.
  • Combine all the dressing ingredients.
  • Pour the dressing over the salad and toss to combine.
  • Refrigerate and serve.

We like to use dried oregano in the vinaigrette dressing, but feel free to add your own twist: dried dill, basil, or tarragon.

How to make the tomato-cucumber salad:

1. In a large bowl, combine all ingredients for the salad: tomato, cucumber, red onion, parsley, and cilantro. Sprinkle with salt and pepper and toss to combine.
