Ingredients list for the steak bites and mashed potatoes
- 1 lb. (450g) sirloin steak cut into 1-inch pieces
- 1 teaspoon garlic powder
- 1 teaspoon instant beef stock, optional
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 6 cloves fresh garlic, peeled and crushed
- 1/2 teaspoon salt
- 2 + 2 tablespoons clarified butter or ghee
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped chives
- 1 1/2 lb. (600g) potatoes, peeled and rinsed
- 1/4 to 1/2 cup milk of choice (dairy or non-dairy)
- 1/2 teaspoon ground black pepper, or to taste
- 1/2 lb. (125g) snow peas, optional

Directions
1. Dry rub the steak bites: In a shallow plate, combine the steak bites with garlic powder, salt, pepper, and instant beef stock. Let it marinate while prepping the potato mash.
2. Make the potatoes: Bring a large pot of salted water to a boil. Carefully add the potatoes to the hot boiling water and boil until potatoes break apart easily when pierced with a fork, about 20 minutes.
3. In the meantime, quickly boil the snow peas for 2 minutes, then soak in ice water. Drain well and set aside. This step is optional.
4. Once the potatoes are done, drain them well and mash with a potato masher until you achieve the desired consistency.
5. In a small saucepan, bring milk and butter to a low simmer and whisk together.
6. Slowly pour in the warm butter and milk mixture while using the potato masher to reach the desired consistency and smoothness. Season with sea salt and pepper and keep the mash warm until ready to serve.
7. Make the steak bites: Heat oil in a large skillet (preferably cast-iron) over medium-high heat.
8. Add crushed garlic cloves and cook for 1 minute, until fragrant.
9. Add the steak bites on one layer and sear each side until slightly brown, about 3-4 minutes per side.
10. When the steak bites are done to your liking, deglaze with 1/4 cup water (or beef broth) reduce the heat, then add in the clarified butter or ghee. Stir to combine until butter is melted and nicely coats the steak. Adjust seasoning with salt and pepper.
11. Serve the steak bites over mashed potatoes and garnish with chopped parsley and chives. Enjoy!

- If you’d like a cheesier potato mash, add grated parmesan or grated sharp cheddar and mix until melted and smooth.
- Try to cook the steak bites undisturbed before turning, this will ensure a nice sear. Moving them too often will get you steamed steak!
How to keep the leftovers
If you have any leftover steak bites (seriously?), allow them to cool to room temperature before storing in an airtight container for up to 3 days in your refrigerator. To reheat the steak bites, warm them up in a cast-iron skillet or an air fryer. Keep the mashed potatoes separate in another airtight container – to reheat, quickly run in the microwave.
