Directions

1. To make the lemon sage pasta: Zest the lemons on a small plate and squeeze the juice over a small bowl.

2. Cook spaghetti in a large pot of boiling salted water. Remove one minute of cooking time from the package directions so the pasta is al dente.

3. In the meantime, make the sauce: Melt diced butter in a large chef pan. Add lemon zest and sage leaves so they infuse in butter.

4. Take one ladle of the cooking pasta water and pour over the lemon sage butter in the pan.

5. Add soy sauce, lemon juice and grated parmesan. Gently stir the sauce with a wooden spoon. 

6. When pasta is ready, drain in a colander and stir in the pan with the lemon butter sage sauce. Stir well to coat the pasta with the sauce. You can adjust the consistency by adding a little cooking water to the pasta.

7. Divide the lemon sage pasta into plates and sprinkle with remaining grated parmesan and black pepper. Enjoy!
