1. To make the sauteed zucchini recipe: Rinse the zucchini under cold water, pat dry, then make thin slices lengthwise using a mandoline, a vegetable peeler, or a sharp knife. In a shallow dish, drizzle the sliced zucchini with olive oil, lemon juice, soy sauce, salt, and pepper (to taste) and let sit for 15 to 30 minutes so the flavors soak in.
2. Heat 1 tablespoon butter in a large skillet over medium-low heat. Fry minced garlic until fragrant, about 1 minute. Make sure not to burn the garlic. Set aside on a small plate.
3. In the same skillet over medium-low heat, add the zucchini slices drained from the marinade. Cook zucchini on each side, until browned but not charred – about 2 to 3 minutes per side.
