Caribbean Corn And Pumpkin Soup


This fresh, blended soup is silky smooth with a well-balanced flavor. Tender dumplings are perfect against the pumpkin-coconut soup base and mingle with fresh corn and a fruity heat from Scotch bonnet chile. What are spinner dumplings?

Spinner dumplings, also called spinners, are made by forming a dough of milk, water, and salt into thin tapers. They spin (hence their name) and sink to the bottom of the liquid they are cooked in. Once cooked, the dumplings will float to the top of the pot.

If you don’t feel comfortable cutting up the tough shell of a pumpkin, cut the pumpkin in half and roast it until tender, then scoop out the flesh from the skin after letting it cool slightly.
