Watermelon Soju Punch (Subak Soju Hwachae) Recipe
Watermelon Soju Punch (Subak Soju Hwachae) is a mash-up of two popular Korean punches, subak hwachae and subak soju (subak means watermelon in Korean). Served in a hollowed-out watermelon, the punch consists of watermelon juice, lemon-lime soda, lemon juice, soju, Campari, and two kinds of milk. It's fruity, tart, a touch creamy, and very refreshing.
To me, summers in Korea have always been synonymous with watermelon. Office workers tote them home in braided slings for a refreshing evening treat, or visitors bring bow-tied melons (sold at department stores) as a treasured host gift.
It’s also the star of two popular Korean drinks: watermelon hwachae and watermelon soju. Both are incredibly refreshing punches perfect for a party, especially when you use the watermelon as both the main ingredient and the serving vessel.
What are subak hwachae and subak soju?
Hwachae, which translates to “flower water,” is a fizzy, milky, fruit-based dessert that dates back to the Joseon Dynasty, when it often served during royal banquets adorned with flowers. Traditionally, hwachae was made with sweetened water (flavored with honey or omija, a five-flavor berry) and a variety of fruits like pear or flowers like azalea.
It can include apples, strawberries, peaches, and tangerines, but the most popular version is made with watermelon. In this sweet and creamy punch, watermelon is scooped into balls, cut into cubes, or pureed, then mixed with other fruit, honey, milk, “cider” (a Korean take on Sprite), and tons of ice.
For an alcoholic spin, there’s subak soju, or watermelon soju — which is exactly what it sounds like. The refreshing, large-format cocktail is a combination of soju, Korea’s signature distilled spirit; fresh watermelon juice; and ice. Like hwachae, subak soju is served in a watermelon, making it easier to share and amps up the party experience.
Tips for making Watermelon Soju Punch (Subak Soju Hwachae)
I like to combine the boozy soju and the fruit punch for the ultimate, large-format watermelon cocktail. A splash of Campari and a pinch of salt helps to mellow the sweetness. A duo of milks — whole and sweetened condensed — adds richness to the punch and a lightly creamy texture.
And the piece de resistance? Presenting it in the hollowed out watermelon with plenty of straws and glasses to go around.
