It’s no secret: Costco is a favorite stop for professional chefs and food lovers across the country. The bulk retailer is a treasure trove of pantry staples and hidden gems — including a well-stocked cheese case. All that abundance can be overwhelming, though.
“I would approach shopping at bulk retailers the same way you would with other grocery stores — stocking up on everyday essentials that are used frequently and purchasing more specialty items for larger gatherings,” says certified cheese professional Kyra James. “Cheeses like Parmigiano Reggiano and Pecorino Romano may be used more often and therefore are worth regularly picking up in bulk.”
We tapped James and two other experts to share their favorite Costco cheeses, from classics to lesser-known picks.
Kirkland Parmigiano Reggiano

Costco’s take on a classic Parmigiano Reggiano, aged for 24 or 36 months, is a no-brainer for “Cheese Sex Death” author and former cheesemonger Erika Kubick. It’s available in one-pound wedges — but she reassures us that this this “go-to” cheese is versatile and crowd-pleasing enough to work through quickly. James seconds this pick, noting its high quality at an affordable price point. Try it shaved over grilled vegetables for a brilliant summer dinner.
Meredith Dairy Marinated Goat Cheese

Kubick describes this spreadable Australian goat cheese — marinated in extra-virgin olive oil, garlic, and herbs — as “unbelievably delicious” and unique. Very few cheeses are made on the continent, she notes. Spread it on crackers, or take a page from Kubick and reserve its marinade for eggs and dressings. While Costco offers a nearly 20-ounce jar, you can snag a smaller one at local grocers.
Kirkland Signature Isigny Ste Mere Imported French Brie

Created in the French region of Normandy by famed producer Isigny Ste-Mère, this double-cream brie is also unmissable. James says it brings a “bright, oceanic funk” that offers excellent value for the size and price. (It’s typically offered around $12 per package.) She recommends picking this one up this one for gaps in a charcuterie board or serving it as a gooey baked appetizer.
Kirkland Coastal Cheddar

Matured by Ford Farm Dairy on the British coast for up to 15 months, this nutty cheese develops a noticeable crystallization and crunch thanks to calcium lactate that develops through the maturation process. Lucia Palm, a sommelier who often shares her Costco favorites on social media, says this one is a must-have for any warehouse run. Use it to round out charcuterie boards or snack plates.
Garcia Baquero Spanish Cheese Selection

If you don’t want to commit to full blocks of unfamiliar cheese, add this sampler spread to your cart. On a recent Costco excursion, James says she tried this bundle of three Spanish cheeses (Manchego, Queso de Cabra, and mixed-milk Iberico), and was pleased with the texture and variety.
