I use this 18- x 18-inch cutting board every day, and I love it. Bobby Flay uses the same board but in walnut. I enjoy that this chopping block doesn’t move while in use (read: I don’t have to put a wet towel under it), it’s reversible, and because it’s an end-grain cut, my knives cut through food without sinking into the board. With end-grain cuts, the wood fibers are arranged vertically and resemble a checkerboard. They self-heal and won’t dull your knives, making them last longer. Plus, you won’t see any knife marks on it. It’s heavy, durable, and 3 inches thick, and it can even be used as a charcuterie board or butter board.

Ina Garten uses this edge-grain cutting board and even believes that a butcher block like this is one of the top kitchen tools you need. She owns a lot of John Boos boards and says, “If you take care of them, they last forever.” In the video, you can see she has two of them butt against each other, making her countertop even more knife-friendly. Available in three sizes and different woods, this board is 18 x 12 inches and 1.5 inches thick — that’s plenty of room for prepping those summer vegetables. I’m not entirely sure, but it appears Gordon Ramsay uses the smaller version of this board.

I can’t help but think how great this board would be during the holidays when I’m carving a turkey or slicing prime rib.
