Ingredients you need for the Parmesan Bean Soup with Kale
4 (15-oz) cans of white beans (cannellini beans, northern beans…), drained and rinsed
1 tablespoon olive oil
1 yellow onion, minced
6-8 cloves garlic, finely minced
6 cups low-sodium vegetable broth
15 ounces (420g) can diced tomatoes, drained
1 tablespoon Italian seasoning
1 teaspoon kosher salt
½ teaspoon black pepper
4 cups shredded kale
3/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley, for garnish
Directions
1. To make the parmesan bean soup: Heat olive oil over medium-high heat in a large pot or Dutch oven. Add onion and garlic; cook until onions are translucent and garlic is fragrant – about 2-3 minutes. Add in the broth, tomatoes, Italian herbs, salt and pepper.
2. Bring to a boil, reduce the heat, and simmer for 5 minutes to combine all the flavors.
3. Stir in the beans and kale. Simmer gently until the kale has wilted, about 3 – 5 minutes.
4. Remove from heat. Add the grated parmesan cheese and adjust the seasoning with salt and pepper if needed. garnish with parlsey, and serve the parmesan bean soup immediately. Enjoy!
