Crudités with Miso-Sesame Dip


Nutty white miso and earthy toasted sesame seeds come together in this hearty, umami-rich dip. Briefly blending the sesame seeds just until they form a chunky powder is key to making them easier to combine with the miso mixture. What is white miso?

White miso, also known as shiro miso, is a savory Japanese fermented paste made from soybeans and either rice or barley. It is commonly used to enhance the flavor of soups and sauces, and as a pickling agent. Despite its name, white miso is typically a pale yellow color. 

What are crudités?

Crudités are an assortment of fresh, seasonal vegetables, usually in a variety of colors, served raw alongside a dip. Some vegetables, such as green beans or broccoli florets, can benefit from a quick blanching to enhance their flavor, texture, and color on a crudité platter.

If you don’t have a blender, you can grind the sesame seeds by hand in a mortar and pestle and whisk the remaining ingredients together. Be careful not to blend the sesame seeds for too long. If they start to release their oils, they will become a paste instead of having the coarse, dry texture needed for this recipe.

Store dip in an airtight container for up to four days in the refrigerator. Re-stir before serving.
