Buffalo Chicken Burgers


All the spicy and buttery flavors of classic buffalo chicken wings come together in these spicy chicken burgers. To ensure the patties stay juicy, use a mix of ground white and dark meat chicken, and stir in freshly grated and drained sweet onion. The blue cheese–studded celery slaw will be very thick when first stirred together, but as it chills it will loosen to a creamy consistency.

What’s the difference between blue cheese and Gorgonzola?

Gorgonzola is a type of blue cheese named after a town in the Lombardy region of Italy. Gorgonzola is typically creamier and less pungent than other blue cheeses, making it a great introduction into blue cheese. For a more mild flavor, use Gorgonzola instead of blue cheese in this recipe. 

Why is it called Buffalo sauce?

Buffalo sauce, commonly tossed on chicken wings, is named after the place where it originated, Buffalo, New York. It was first served at the Anchor Bar in 1964 by Teressa Bellissimmo. Since then, it’s been used in dips, calzones, burgers, and more.

If you don’t love the spicy bite of raw onion, you can soak your onion slices in cold water for two minutes to mellow the flavor. Be sure to drain the onion slices well and pat dry before putting on the burger.
